Resumen
La Acrilamida (AA) es un compuesto tóxico que se forma al reaccionar los azúcares reductores y aminoácidos contenidos en los alimentos cocinados a elevadas temperaturas. Por otra parte, el extracto de cáscara de rambután (ECR) es una fuente de diversos compuestos bioactivos con reconocida actividad antioxidante. El objetivo fue evaluar esta actividad del ECR (4 – 64 μg /mL), así como su CL50 en un cultivo primario de leucocitos, con el fin de asegurar su inocuidad y evaluar su efecto genoprotector contra el daño causado en un modelo de toxicidad in vivo, en ratas Wistar expuestas a la acrilamida (20 mg/kg de pc). Se observó una viabilidad mayor al 75% después de la exposición de los leucocitos al ECR, en todas las concentraciones utilizadas, por lo que se consideró no tóxico. Se estableció una CL50= 94.61 μM para la AA en este modelo experimental. El ECR mostró una notable disminución en el daño al DNA, al reducirse la formación de micronúcleos (MN) en los eritrocitos policromáticos (EP) procedentes de la médula ósea de ratas Wistar tratadas con AA vía oral. Se concluye que por estas características se perfila como un potencial nutraceútico.
